Zucchini Bread: Moist

Zucchini Bread: Moist, Flavorful, and Perfect Every Time
There’s something incredibly comforting about baking a loaf of homemade zucchini bread. Maybe it’s the warm aroma of cinnamon wafting through the house, or the joy of slicing into a golden loaf that’s perfectly moist, soft, and subtly sweet. Whatever the reason, this recipe for Moist Zucchini Bread is the one you’ll come back to again and again.

It’s the perfect way to use up extra zucchini (especially in the summer!), and no one will ever guess there are vegetables hidden inside — not even the pickiest eaters.

Why This Zucchini Bread Is So Good
✅ Super Moist – Thanks to shredded zucchini and just the right amount of oil, each slice is soft and tender.

✅ Perfectly Spiced – A touch of cinnamon (and maybe a pinch of nutmeg) makes every bite warm and flavorful.

✅ Versatile – Add nuts, chocolate chips, or even swap in whole wheat flour for a healthier twist.

✅ Great for Breakfast or Snack – Enjoy it with coffee in the morning, or as a sweet midday treat.

Ingredients
2 cups shredded zucchini (no need to peel)

2 large eggs

½ cup vegetable oil

½ cup white sugar

½ cup brown sugar

1 tsp vanilla extract

1 ½ cups all-purpose flour

½ tsp baking powder

½ tsp baking soda

½ tsp salt

1 tsp ground cinnamon

Optional: ½ cup chopped walnuts or chocolate chips

Instructions
Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.

Mix Wet Ingredients
In a large bowl, whisk together eggs, oil, sugars, and vanilla until smooth.

Add Zucchini
Fold in the shredded zucchini (squeeze out excess moisture if very watery).

Combine Dry Ingredients
In another bowl, whisk flour, baking powder, baking soda, salt, and cinnamon. Gradually stir into the wet mixture until just combined.

Add Mix-ins
Fold in nuts or chocolate chips if using.

Bake
Pour batter into the prepared loaf pan and bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.

Cool & Serve
Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Tips for Success
Don’t overmix – Stir just until the ingredients are combined for the best texture.

Let it rest – The flavor and moisture improve after a day, so it’s great to make ahead.
