2 cups (250 g) all-purpose flour

1 cup + 2 tbsp (220 g) granulated sugar

8 eggs

Zest of ½ lemon

For the Diplomatic Cream (Crema Diplomatica)

2 cups (500 ml) whole milk

1 cup (250 ml) fresh heavy cream

¾ cup + 2 tbsp (170 g) granulated sugar

¾ cup (75 g) cornstarch

5 egg yolks

Zest of 1 lemon

A pinch of salt

Additional Ingredients

⅓ cup (80 ml) rum

Fresh mint leaves (for garnish)
