I can’t stop, I won’t stop – I’ve made this recipe 4 times this month and it’s still amazing.

1. Preheat oven to 400 degrees F (200 degrees C).

2. In a large bowl, combine the zucchini, squash, and cherry tomatoes.

3. Add the minced garlic, olive oil, salt and pepper to the vegetables. Mix everything together until the vegetables are evenly coated.
4. Spread the vegetables in a single layer on a baking sheet. Make sure they don’t overlap too much to ensure even roasting.
5. Roast in the preheated oven for about 25-30 minutes, or until the vegetables are tender and golden.
6. Sprinkle the grated Parmesan over the roasted vegetables in the last 5 minutes of cooking.
7. Garnish with fresh basil before serving if desired.
Variations and tips
To change up the flavor, try adding different herbs like rosemary or thyme to vegetables before roasting. For those who enjoy a little heat, a pinch of red pepper flakes can add a delicious touch. Additionally, substituting feta cheese for the parmesan can give the dish a spicy touch. Experiment with adding other vegetables like bell peppers or onions to create a more robust and flavorful mix.
