I prepared this for an event, and everyone kept raving about how delicious it was.
Directions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, combine the ground beef, almond flour, egg, garlic powder, onion powder, salt, and black pepper. Mix until just combined.
Roll the mixture into small, bite-sized meatballs and place them on the prepared baking sheet.
Bake the meatballs in the preheated oven for 15-20 minutes, or until they are cooked through and slightly browned.
While the meatballs are baking, prepare the glaze by combining the sugar-free ketchup, soy sauce, apple cider vinegar, sugar-free sweetener, Worcestershire sauce, and smoked paprika in a small saucepan over medium heat. Stir until the sweetener is dissolved and the glaze is slightly thickened.
Once the meatballs are done baking, remove them from the oven and brush them generously with the glaze.
Return the glazed meatballs to the oven for an additional 5 minutes, or until the glaze is bubbly and caramelized.
Serve the meatballs warm, garnished with a sprinkle of salt or chopped fresh herbs if desired.
Variations & Tips
For a different flavor profile, try using ground turkey or chicken instead of beef. You can also experiment with different spices in the glaze, such as adding a pinch of cayenne pepper for some heat or a dash of ginger for an Asian-inspired twist. If you prefer a thicker glaze, let it simmer a bit longer on the stove to reduce further. For a dairy-free version, ensure the Worcestershire sauce you use is free from anchovies.
