Directions
Preheat your oven to 375°F (190°C) and grease a rectangular baking dish.
In a large bowl, mix together the almond flour, baking powder, salt, garlic powder, oregano, and basil.
In a microwave-safe bowl, combine the mozzarella cheese and cream cheese. Microwave in 30-second intervals, stirring in between, until the cheese is melted and smooth.
Add the melted cheese mixture to the dry ingredients along with the eggs. Mix until a dough forms.
Divide the dough into small balls, about the size of a golf ball.
In a small bowl, combine the melted butter and minced garlic.
Dip each dough ball into the garlic butter mixture, then place them in the prepared baking dish, slightly touching each other.
Sprinkle the Parmesan cheese over the top.
Bake in the preheated oven for 20-25 minutes, or until the bread is golden brown and the cheese is bubbly.
Garnish with fresh parsley before serving.
Variations & Tips
For a spicy kick, add a pinch of red pepper flakes to the dough. You can also experiment with different cheeses, such as cheddar or gouda, for a unique flavor. If you prefer a more herbaceous taste, try adding fresh rosemary or thyme. To make this dish even more indulgent, serve it with a side of marinara sauce for dipping.
