This is one of my husband’s go-to meals for a regular evening!

Preheat your oven to 375°F (190°C).
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent.
Add the ground beef to the skillet, breaking it up with a spoon as it cooks. Cook until the beef is browned.
Stir in the diced bell peppers, cauliflower, salt, pepper, paprika, and oregano. Cook for another 5-7 minutes until the vegetables are slightly tender.
Divide the beef and vegetable mixture evenly between two foil containers.
Sprinkle the shredded cheddar cheese evenly over the top of each container.
Place the containers in the preheated oven and bake for 20-25 minutes, or until the cheese is bubbly and golden brown.

Allow to cool slightly before serving.
Variations & Tips
For a spicier kick, add a pinch of crushed red pepper flakes or a chopped jalapeño when cooking the onions and garlic. You can also substitute the ground beef with ground turkey or chicken for a lighter version. Feel free to add other vegetables like mushrooms or zucchini to the mix for more variety, and use different types of cheese such as mozzarella or Monterey Jack for a different flavor profile. If you have picky eaters, consider blending the vegetables in a food processor for a finer texture that might be less noticeable.
