Chocolate Saccottini (Italian Brioche Pastries) – Soft, Buttery Breakfast Treats

Preparation Method
1. Activate the Yeast

In a small bowl, mix the milk with the fresh brewer’s yeast until dissolved.

2. Prepare the Dough

In a large mixing bowl, combine the flour and sugar. Add the milk and yeast mixture along with the egg. Stir with a spoon until the liquids are absorbed, then knead by hand until you form a compact dough.

Add the vegetable oil and continue kneading until fully incorporated. Work the dough until smooth and elastic, then shape it into a ball.

3. First Rise

Cover the dough and let it rise for about 2 hours, or until doubled in size.

4. Shape the Saccottini

Roll out the dough into a large rectangle (about 30 × 40 cm) using a rolling pin. Cut it into 8 smaller rectangles.

Place a piece of dark chocolate along the short edge of each rectangle. Start rolling the dough tightly. When you reach halfway, add a second piece of chocolate, then continue rolling to form a neat pastry roll.

5. Second Rise

Place the shaped saccottini onto a baking tray lined with parchment paper. Cover with a kitchen towel and let rise for another 1 hour.

6. Bake

Brush the surface with beaten egg for a shiny, golden finish. Bake in a static oven at 190°C (375°F) for about 20 minutes, or until golden brown.

7. Decorate and Serve

Allow to cool slightly, then dust with powdered sugar before serving.

Tips for Perfect Chocolate Saccottini

You can replace chocolate bars with chocolate chips for convenience.

For variation, fill with jam, custard cream, or hazelnut spread. If using custard or jam, add a thin layer before rolling and pipe extra filling inside after baking using a pastry syringe.

For extra flavor, add a touch of vanilla extract or citrus zest to the dough.

Storage

Store the saccottini under a glass dome or in an airtight container for 1–2 days. However, they are best enjoyed warm, fresh out of the oven. You can also freeze them once baked and reheat in the oven before serving.

Final Thoughts

These homemade chocolate saccottini are soft, fluffy, and filled with rich dark chocolate — a bakery-style treat you can easily make at home. Perfect for breakfast or an afternoon snack, they bring warmth, sweetness, and comfort to your table. Once you try them, they may become your go-to Italian brioche pastry recipe.
