Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Place the cauliflower in a food processor and pulse until it resembles rice.
Transfer the cauliflower to a microwave-safe bowl and microwave for about 5 minutes until soft.
Place the cooked cauliflower in a clean kitchen towel and squeeze out as much moisture as possible.
In a large bowl, combine the cauliflower, Parmesan cheese, 1/4 cup mozzarella cheese, salt, garlic powder, oregano, and egg. Mix well to form a dough.
Press the cauliflower mixture onto the prepared baking sheet, forming a circle about 1/4 inch thick.
Bake in the preheated oven for 20 minutes, or until the crust is golden brown.
Remove the crust from the oven and top with 1 cup shredded mozzarella cheese and crumbled sausage.
Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
Let the pizza cool for a few minutes, then garnish with chopped parsley before slicing and serving.

For a vegetarian version, skip the sausage and load up on your favorite vegetables like bell peppers, mushrooms, or spinach. You can also add a bit of tomato sauce under the cheese for a more traditional pizza flavor.
