Remove the leaves and trim the stem of the cauliflower, keeping the core intact.
Cut the cauliflower into 1-inch thick slices, creating ‘steaks’.
Place the cauliflower steaks on a baking sheet lined with parchment paper.
In a small bowl, mix together the olive oil, garlic powder, onion powder, thyme, rosemary, salt, and black pepper.
Brush the olive oil mixture over both sides of each cauliflower steak.
Roast in the oven for 20 minutes, then flip the steaks over and roast for another 10 minutes.
Sprinkle the shredded mozzarella cheese evenly over the top of each steak.
Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
Remove from the oven and sprinkle with fresh parsley before serving.
