Top each zucchini slice with a generous amount of the cheese mixture.
Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
For an extra crispy top, switch the oven to broil and cook for an additional 1-2 minutes, watching closely to prevent burning.
Remove from the oven and let cool slightly before transferring to a serving platter.
Garnish with chopped fresh parsley before serving.
