I discovered this recipe and was eager to test it out. It ended up being wonderful!

Directions
Preheat your oven to 375°F (190°C).
In a large skillet, melt the butter over medium heat. Add the broccoli florets and sauté until they are tender, about 5 minutes.
Stir in the cauliflower rice, garlic powder, onion powder, salt, and pepper. Cook for another 2-3 minutes until the cauliflower rice is heated through.
Remove the skillet from the heat and stir in the heavy cream and half of the shredded cheddar cheese until well combined.
Transfer the mixture to a greased baking dish. Arrange the sliced red and yellow bell peppers on top.
Sprinkle the remaining cheddar cheese over the top of the casserole.
Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and golden brown.
Allow the casserole to cool for a few minutes before serving.
Variations & Tips
For a bit of spice, consider adding a pinch of red pepper flakes to the cheese mixture. You can also swap out the cheddar for a blend of cheeses like mozzarella and parmesan for a different flavor profile. If you prefer a meatier dish, add some cooked, diced chicken or crumbled bacon to the mix before baking. For a vegetarian version, ensure the cheese is vegetarian-friendly and consider adding more vegetables like mushrooms or zucchini.
