My whole family was crazy about this dish. Next time, I’m definitely doubling the recipe.
1. Preheat your oven to 375°F (190°C).
2. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
3. Add the diced onion and minced garlic to the skillet, cooking until the onion is translucent.
4. Stir in the taco seasoning and salsa, allowing the mixture to simmer for a few minutes.
5. In a mixing bowl, combine the cooked beef mixture with 1 cup of shredded cheddar cheese, sour cream, diced green bell pepper, and cauliflower rice. Season with salt and pepper to taste.
6. Transfer the mixture to a greased baking dish and spread it out evenly.
7. Sprinkle the remaining 1 cup of shredded cheddar cheese on top.
8. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
9. Let the casserole cool for a few minutes before serving. Enjoy!

For a spicier kick, consider adding some chopped jalapeños to the casserole mix. If you have picky eaters, you can sneak in extra veggies like zucchini or spinach for added nutrition. For a different protein, try using ground turkey or chicken instead of beef. You can also top the casserole with sliced olives or diced tomatoes for extra texture and flavor.
