👩🍳 Preparation Method
1️⃣ Prepare the Hard-Boiled Eggs
Place eggs in a saucepan, cover with water, bring to a boil, then simmer for 8–9 minutes. Cool under cold water and peel. Set aside.
2️⃣ Make the Meat Mixture
In a large bowl, combine ground lamb, breadcrumbs, raw eggs, Parmesan, parsley, garlic, olive oil, salt, and pepper. Mix thoroughly until well combined but do not overwork the meat.
3️⃣ Shape the Base
Lay a sheet of parchment paper on your work surface. Spread the meat mixture into a large rectangle about 1–1.5 cm (½ inch) thick.
4️⃣ Add the Filling
Layer the prosciutto evenly over the meat. If using cheese, sprinkle it on top.
Place the hard-boiled eggs in a straight line across the center.
5️⃣ Roll the Meatloaf
Using the parchment paper to help you, carefully roll the meat around the filling, sealing the edges tightly so the eggs are fully enclosed. Shape into a compact loaf.
6️⃣ Prepare for Baking
Transfer the meatloaf to a greased baking dish, seam side down. Brush lightly with olive oil. Add a small splash of wine or broth to the bottom of the pan if desired.
7️⃣ Bake
Bake in a preheated oven at 180°C (350°F) for about 50–60 minutes, or until golden brown and cooked through (internal temperature should reach 70–75°C / 160–165°F).
For extra browning, broil for the last 3–5 minutes.
8️⃣ Rest and Slice
Let the meatloaf rest for 10 minutes before slicing. This helps retain the juices and makes cutting easier.
